What is Muscat Ice Wine?

Muscat Ice Wine Production Process

Step 1: Grapes Left to Freeze

Muscat grapes are left on the vine long after the usual harvest. They need to freeze naturally in temperatures of -7°C or lower. This extra time on the vine increases their sugar and unique flavours, key to the wine’s sweetness.

Step 2: Hand Harvesting

Frozen grapes are picked by hand early in the morning when it’s still very cold. This is done quickly because a sudden thaw could ruin the grapes.

Step 3: Pressing

The frozen grapes are pressed right away. The ice stays behind, leaving just a small amount of concentrated, sweet juice.

Step 4: Fermentation and Aging

The juice is fermented slowly at low temperatures over several months to keep its rich aromas. The wine may also be aged to improve its flavour.
